Ingredients kachori

  • 2 cups maida (all-purpose flour)
  • 3 tbsp oil (for moyan in dough)
  • Salt to taste
  • Water as required (for kneading)
  • KESARISHALYA OIL for deep frying

How to Make kachori

  1. Prepare the dough: Mix maida, salt, and oil. Add water slowly and knead into a soft dough. Cover and keep aside for 20–30 minutes.
  2. Prepare stuffing: Heat oil in a pan, add cumin & fennel seeds. Add ginger, chillies, and soaked moong dal. Roast with spices (turmeric, chilli, coriander, garam masala, salt, amchur) until mixture is dry. Let it cool.
  3. Make kachoris: Divide dough into small balls. Flatten each, stuff with moong dal filling, and seal edges properly.
  4. Roll lightly with hands into thick discs (do not press hard).
  5. Serve hot with chutney or aloo sabzi.
